I brought 4000 ml of filtered water to a boil in each pot and turned off the heat before dividing the honey between them. Then, I turned on the heat back on and brought it to a boil for 5 minutes. You don't have to boil your honey, but there's a chance that the wild yeast will compete with the fancy French ones who don't understand the mean streets. In this case, I had a gallon of honey to work with; 12 pounds of sweet nectar from a FOAF who's an apiarist outside Dallas, TX. The last batch of mead I made used filtered honey I purchased at a farmer's market that was from hives in Mendocino. Whatever you use, make sure it's raw honey that's minimally processed and hasn't had anything added to it.
